Re: Ribs......
BBQ is a religious issue. Much like religions everyone believes their regional variety that they grew up with is the best typically. Heck, here in the south, when it comes to BBQ you can nearly start a fist fight just by espousing your preference of either dry rub or wet ribs in the wrong company.
And if you talk about BBQing a pig to a Texan they look at you like you're crazy because they believe a proper BBQ is done with cow. And dont even get me started on the sauce debates.
For equipment, weber makes great products. But to be honest all of the best ribs I've ever had have been done in home fashioned redneck designed smokers. An old 55 gallon drum makes a fine BBQ in the right hands. It's all about the choice of wood, how hot the fire is, how close the meat is to the fire, etc.
But for me, proper BBQ ribs come from the side of a pig, they are smoked all day to the point of the meat falling off of the bones and they've lathered in a wet sauce that is a good balance of sweet and spicy.
