Ribs......

I love ribs. I love Q. I have a cameron smoker and make amazing ribs, but in a drunken stupor I have decided that I am on a mission from God....and having read the latest Vogue magazine.....am about to pursue my quest. I will prevail and, if I do say so myself after eating my own freeking stellar chili, I am going to make killer ribs. So to that end, I, of course did a google search... Now here is what I found....

Quote:

I love to cook. The fried chicken thread got me to thinking about how I could contribute something positive towards the future of the white race and then I hit upon it. For some crazy reason, at least where I live, smoked ribs are something that blacks are supposed to be good at. Thinkin that my ribs might be subpar, I just had to try ‘em out. Well, like The Noble Injun Myth by Mark Twain, I believe that my white brothers are either 1. romanisizin about something ‘cause they want it to be true, 2. they are lying or 3. they just don’t know what they are talking about ‘cause they aint never et no good ribs. Now I don’t proclaim to be the world’s best rib smoker, but I can smoke a pretty mean side-a-hog. Some say they are the best they have ever et. Jus so we may counter the whole “blacks sure can smoke a mean rib” myth that seems rampant, I offer the following so that anytime anyone comes to you with some such similar nonsense, you can invite them over and dispel another black invention myth.

Re: Ribs......

BBQ is a religious issue. Much like religions everyone believes their regional variety that they grew up with is the best typically. Heck, here in the south, when it comes to BBQ you can nearly start a fist fight just by espousing your preference of either dry rub or wet ribs in the wrong company.

And if you talk about BBQing a pig to a Texan they look at you like you're crazy because they believe a proper BBQ is done with cow. And dont even get me started on the sauce debates.

For equipment, weber makes great products. But to be honest all of the best ribs I've ever had have been done in home fashioned redneck designed smokers. An old 55 gallon drum makes a fine BBQ in the right hands. It's all about the choice of wood, how hot the fire is, how close the meat is to the fire, etc.

But for me, proper BBQ ribs come from the side of a pig, they are smoked all day to the point of the meat falling off of the bones and they've lathered in a wet sauce that is a good balance of sweet and spicy.

I remember a conversation with you rhetorical that seemed to be pretty demeaning toward ribs while espousing the virtues of dropping almost a grand on a bottle of wine.
If the search function was working I'd have found the thread, but I am not gonna go looking for it page by page heh heh

This is funny, because I had ribs last night. Personally I don't think you need a dedicated smoker and grill. A nice big grill can be used to cook and smoke. For $159 this one is hard to beat. http://www.chargriller.com/shop/grills/outlaw.html

Add the side fire box for $59. http://www.chargriller.com/shop/bbq-...-fire-box.html

I am thinking that that is the thread and it is just memory of the discussion that might be out of whack.

In there is talk of ribs, comparison to 3 star reataurants and mentions of $200 a bottle wine. What is missing is the demeaning part.

I think sometimes folks remember conversations as being pissier than they actually were.

But, I could be wrong as I often am

Well, I only found in the search 2 threads where it appeared that you and Spaz discussed wine and ribs. The second was pretty much a continuation of what I linked to. http://www.oprano.com/msgboard/showthread.php?t=54959 Is the continuation.

Is it possible for a thread to exist on Oprano for more than a few hours before someone gets in a fight with Rhetorical and kills the fucking thread? Jesus, this is getting old.

For me it was always Dreamland in Tuscaloosa, Ala http://www.dreamlandbbq.com/default.aspx?id=5 I did some contract work in Mississippi 15 or so years ago and made it a habit to stop by regularly on my way through.

You know damn well that is not the case, Jace. Don't you remember the pickle you got yourself into? You cut and run because it got way to serious for you. And I had nothing to do with that. I just pointed it out succinctly and you were out the door. Now you are just hoping we will all forget. Nice try though. Just a piece of advice. If you are going to tell a lie in public, at least make it semi believable.:whistling

Nah, as much as I appreciate that I couldn't look stupid I admit I probably do on this one. However, it was where you stated that there is a reason people pay the big bucks for a meal and it is because it tastes better.

Any old black man with a pit bbq will sell you heaven for a couple of bucks :)

You never really understood the point I was making. You see anyone with the desire will be able to make great ribs. But I was talking about food that is so complex, I could never in my lifetime hope to prepare. You have to understand, there is a reason why people pay money for great cuisine and great wine. If you think about it, most of those people are rich and successful and will only spend money to get great value. So when you drop a grand on a meal, it will be worth it or the restaurant will crash and burn.
As for the wine, the same rules apply. It is called the free market. If it is not worth the price, it won't sell.
A good example. I was reading about this Atlanta madam that got busted in a million dollar house. In my neck of the woods, that is a tear down or a pretty good apartment. In Atlanta it is still luxury. And I gotta say, I wish it was the same here because an apartment....that I can see from my deck...just got listed at 18.2 million.
So the point I am making is value is perception and value is what you can sell for more than you paid.

Although I'm amused that now we're fighting about whether we're fighting with Rhetorical or not....I'm gonna continue to talk BBQ....

There are at least a couple of Dreamland locations in Atlanta now. One in Roswell and another in Norcross. Although I haven't personally tried it, I've had a couple of fat friends who kinda turn their nose up at it.

Around Atlanta, I like 3 BBQ joints a lot:

1) Williamson Bros.
2) Pappy Reds
3) Slopes

Slopes is more of a lunch thing though, I go there specifically for the pulled pork sandwich. Not sure they even have ribs.

FFNs need a fact finding mission to compare all 3 to Dreamland by making fresh visits to all of them.

For ribs specifically, hard to beat Memphis, there are at least 3 of the best rib joints in the world by all acconts there. Last trip up, we tried Interstate BBQ which is supposed to be the best for wet ribs. I saw no reason to dispute their title. They were outstanding. True roll your sleeves up, messy, falling off the bone yummy ribs.

Next trip we need to try Rendezvous, which has both dry rub and wet. It should give Interstate a run for it's money, both are well reviewed.

Around here there's too many good rib joints to list, and that's just on the SW side of town and doesn't count the mobile ones that open up in a vacant parking lot on any given day.

They may have a good reason, these places usually go down hill once they franchise. But back in the day Dreamland was heaven.

I heard Pappy Reds was good stuff.

Shit! I forgot about Zebs BBQ on Highway 29 N in Danielsville, GA just outside the Classic City. Good "Cuntry eatin" :okthumb:

Pappy Reds also has a coca-cola brownie... Imagine your basic chocolate brownie, but with coca cola in the mix. Makes for a very unique, but good, taste...

Dont think I've tried their ribs though either. I tend to default to pulled pork.

My "regular" is what they call a Deluxe Baked Potato at a little place named Brisket BBQ, just a couple of blocks from where I bank. A Texas sized baked potato with all the usual fixins, plus a generous portion of chopped BBQ Beef Brisket and sauce. Add a side salad and you have a meal that'll satisfy the heartiest FFN appetite. :okthumb:
