Sabby, lots of good points here ... I would also support the 'regular updates are better than bulk content', however you have to look at whether you have a trial, what your retention from the trial is etc.
If you have content that updates every day, you have to make sure that the customer who signed up *today* can see that you have updated X times this week ... with our celeb sites, we have an updates block on our front page of members that lists the last week of updates, and a 'more' page that catalogues every update we ever made.
I can't stress enough how important it is to present content creatively & to build 'time wasters' ... ie, turn a bunch of pics of yourself into jigsaws or, maybe with your style of site, a 'request' line ?
As for pin pointing exactly how many pics & vids ... you could justify a 'paysite' with less than 100 pics, if you presented them & priced it right. Pick up a magazine and count how many pics are in each 'spread' - its usually a 6 page spread, no more than 10 pics, and its about $5 - 7 for a magazine.
I've been working on breaking my members content into 'blocks' and converting it to ebooks -
http://www.purvette.com
1 ebook is made up of about 10 stories, the other 2 have about 15 articles in each.
Purve Models Australia has about 20 'centerfold' pics of varying sizes, 40 small pics of treasure trails and several pages made up of *survey results* ... so I guess my advice is that pretty much anything goes, you just have to market it and present it in a format punters are comfortable with.
With your content assets you've built over the years, you should have no trouble making good members areas

good point about timewasters
we took our games off the site thinking no one ever played them...well, we got a bunch of emails about it, so put them back up....the complaints came mainly from long time members who had seen most of our site and played the games between and after seeing the most recent updates...
We also have a huge list of all our updates dating back several months and always have the most recent updates in a table at the top of every main category page in the site
I've even listed plugin updates and members seem to appreciate that as well (I usually do that on a Friday update when I just finished a full set update for Thursday's update and want to wait until the Monday update to start a new full set and/or a new model)
we're also adding things like a Coming Soon page to give a sneak preview of coming updates...
