This shouldn't even be a question. Charcoal all the way. Hardwood charcoal. I get mine from Big Green Egg.

My grandfather used to cook a cow over a pit a few times a year and I've been to lots of parties where people cook over a firepit, but me+fire+no means of control=bad.
