I'm partial to Duck, Corolla and Carova and Swan beach in the Outer Banks in NC during the offseason. Most of the beach houses in Carova and Swan are 4WD access only so there's not many people to bother you. :P Granted, if you're looking for "excitement" there's nothing to so, but I like my vacations to be relaxing with lots of good food.
Second choice would be Waikoloa on the Big Island in Hawaii, but not really a good place for a "short" vacation.
If you're looking for city fun, nothing can beat NYC during Christmas, IMHO.
