K - so my site is built and online. So now I need to start keeping tabs on my stats to build up some intelligence about my site, who is looking at what, where they came from, all that sort of good stuff.

But where to start ? The server that my site runs on has control panel x running on it, so as far as I know that has some analysis tools bundled in, but can anyone recommend where to get started ? Perhaps any tutorials or somesuch I could start reading ?

I've no clue about control panel x, I'm MK Stats all the way.

I thought I'd keep this bumped and fresh for those in the know though ;)

Inside the control panel, click on the icon called Web/FTP Stats, then select webalizer.
Here is a demo from LunarPages

I had to edit this because of a fat fingered typo...lol

Cool, downloaded it now. I imagine I'll have to drop it directly onto my server somewheres ?

Seems like you do not have so much knowledge about a server at all, probably you will do it easier with some of the free counter which are available. The also deliver nice stats

You need to install it, but you need to know the path to the server logs. I'm not sure if I can help you with this because it was already part of my setup. :(

But I'm more than willing to give it a shot. ;)
