With many of you here from the south, I figured what better a place to ask than here. Who has a good Gumbo recipe? I want to cook some tomorrow all day long just let it sit. Let me have it. Thanks. :)

Gumbo is a state of mind... Go to www.foodnetwork.com for some good gumbo recipes.

The base is basically the same and you can add the meat of your choice. Chicken, sausage and seafood are the norm. If you plan to cook it all day... wait until just before you get ready to serve it to add the seafood. The seafood cooks really fast.

make sure the shrimp are gulf shrimp and the sausage is adoullie or alligator:)

gumbo is al about the roux, which is a water and flower mixture that has been cooked down to produce a thick brown stock..

Billy is really the one to ask about Gumbo

I sometimes cheat making Gumbo as a roux is (sort of) a living, breathing thing and can be tricky until you get used to making it

Is a decent shortcut (http://www.nosoc.com/index.asp?PageAction=VIEWPROD&ProdID=104)

Also gumbo really needs Andouille sausage to get the taste right http://www.gumbopages.com/food/andouille.html.
I prefer seafood gumbo over any other type but you can use just about any meat, use left overs if you like. Call your friends tell them it's a come as you are and bring something from their refrigerator for the gumbo party, beer accepted.

Once you get your roux going you can save some or give some to a friend so they can get started

Here's a couple more but I can't vouch for them

Thanks Vick. I never knew it was so involved with making the stock and all that. I am gonna give it a shot today :)
